Riso Gallo Announces Winner of the Eighth Annual UK & Ireland Young Risotto Chef of the Year 2025

LONDON, UK – June 2025 – The heat was on at Tottenham Hotspur Stadium as rising culinary star Mia Walter, aged 19, from Bude, Cornwall, was crowned Riso Gallo UK & Ireland Young Risotto Chef of the Year 2025.

In a thrilling cook-off on 2nd June, thirteen regional finalists showcased their culinary flair before a prestigious panel of judges. Mia emerged victorious with her inventive and sustainable creation: Beetroot and Red Cabbage Risotto, Davidstow cheddar, Cornish apple cider, wild garlic verde with salted and black pepper cashews and sour cream.

Mia wins an all-expenses-paid five day trip to Milan, and a three-day work experience with Michelin-starred chef Fabio Pisani at Il Luogo Aimo e Nadia in Milan, Italy – a dream opportunity for the talented young chef.

Mia said; “This was such a prestigious competition. For me personally it was the most intense that I have been lucky enough to take part in to date, where I was up against some of the best talent and extremely driven individuals.”

She added; “To cook with the Riso Gallo rice, which is of such excellent quality and can tastefully hold its own before you’ve even added anything to it, meant I knew that I wanted to do that purity justice from the get go but whilst still promoting my local and home grown ingredients.

I initially felt very nervous and out of place, but everyone was really lovely and so encouraging!!! During my heat I was certain I had fluffed my dish, I had to think fast and adapt on the spot. I did end up platting my dish differently to how I had envisioned because of these changes, so to then find out that I was the winner was simply overwhelming! I could not believe it, I cried, my mum cried and in that moment I could feel so much support in the room from everyone, not only the chefs but from the entirety of the room which felt like a warm hug from all, there was just so much shared energy and passion. It was an absolute honour to have been apart of this and to have the opportunity to meet and befriend people I’d likely never have got to cross paths with without, just magical.”

Mia is in her 3rd year, at Exeter College, studying Professional Cookery.

Mia’s tutor and Deputy Head of Faculty, Matthew Pickett, said; “This is our 1st year participating in the Riso Gallo Young Risotto Chef of the Year Competition and we have been so impressed by the quality and format of the competition & the support from Jason Morrison and his team has been just incredible.”

“Mia is a very special student and we’re so proud of her ambition and skills, but even more so of her personable and bright personality. She is her own biggest critique, and mentoring Mia is about keeping her pointing in the right direction and allowing her creativity to flow, her winning dish really showcased her love of the West Country and I think perhaps the judges recognised and appreciated this element of her cooking. Swapping out wine for cider and parmesan for Cheddar were bold moves when presenting your dishes to Michelin Star Italian Chefs, but I’m glad she showcased her passion, region and skills, all in one stand out dish and the result speaks for itself. Seeing such an inspiring group of young chefs, cooking with passion, while being encouraged and judged by their esteemed peers is so rewarding, what an experience at such a young age and just starting out in their careers.”

“My fellow judges and I thought Mia’s winning dish was the essence of a well prepared Risotto, keeping the rice as the star of the show, made using zero waste, from locally sourced and gathered foraged ingredients near her west country home. An altogether great risotto to grace any dining experience, well done Mia!”

He added; “A big shout out to all the contestants who gave us a tough decision and one of our most memorable competitions for a few years.”

The judges awarded two runners up; Matthew Beech, from Belfast, has a stage at the Italian Embassy in London; and Shannon Bu, from West London has a stage at The Peninusla Hotel, London with Francesco Dibenedetto.

Exeter College Hairdressing Team Win Prestigious Concept Hair ‘Team of the Year’ Award

Earlier this year the hairdressing team at Exeter College were shortlisted for a national award, standing alongside other fantastic colleges from across the country.

The Concept Hair College Recognition Awards celebrates excellence across the further education sector, with a prestigious panel of industry leaders evaluating nominations from across the UK. The finals were held in Solihull, and we are delighted to announce that Exeter College were the winning college team.

The team were recognised for their collaboration, creativity, and dedication to inspiring learners. Their shared passion and innovative approach was praised as raising the bar in hairdressing and barbering education.

Skills Minister officially launches Foundation Apprenticeships at Exeter College

Exeter College proudly welcomes the Rt Hon Baroness Smith of Malvern, Minister of State for Skills at the Department for Education, to the college today for the official launch of its new Foundation Apprenticeship scheme. The event brings together students, employers, and college staff to celebrate this exciting step forward in skills development and career readiness.

Foundation Apprenticeships are a level 2 qualification that aims to help younger people gain technical knowledge and skills, in areas such as construction, engineering, healthcare and digital, while earning a wage. They are designed for people, typically aged 16 to 21, to open up opportunities for success in critical in-demand skill areas.

Exeter College and Petroc News

Since Christmas, Exeter College and Petroc have been exploring what a deeper collaboration might look like. After careful consideration and robust discussions, the initial work was extremely encouraging. Governors at both Exeter College and Petroc have therefore agreed to move forward and enter what is called a merger in principle.

We now enter a period of due diligence, looking at the detailed legal, financial and strategic considerations of merging. We will seek advice from a group of external consultants but assisted by the senior leadership teams at both Petroc and Exeter College.

This is a voluntary process. Neither college are in any form of intervention, so both Boards have looked at this through the lens of positioning both organisations in the best possible place for the future for staff, young people, employers, our stakeholders and the community. We believe this could be a unique opportunity to strengthen Further Education across Devon and the wider South West.

There is a direction of travel nationally for fewer, larger place-based college groups, with the capacity and capability to meet the ambition of its young people, stakeholders and community. The new group would be the largest college group in the South West, and one of the largest nationally. It would have a £100m annual turnover, creating a regional education and skills powerhouse with the ability to invest, innovate and deliver ‘the exceptional’ for Devon.

Both colleges have their absolute focus on doing the right thing for the young people, Apprentices, Adult learners and businesses that are currently studying at/working with Exeter College and Petroc. That will not change. By exploring this merger, we are seeking to build on our shared values and enhance our collective ability to meet the regional skills need.

Alongside maintaining Outstanding sixth form provision in Exeter and developing Outstanding sixth form provision in North Devon, we believe there are big opportunities for Devon-wide solutions for High Needs Education, Apprenticeships, Adult Education and Higher Technical Education, aligned to local economic need. The emerging vision for Petroc’s Tiverton campus is to create a centre dedicated to meeting the needs of, and supporting the progression of, young people with additional needs.

Should this move forward we think there will be three main advantages, for staff, students, employers, stakeholders and the community:

  • A larger group, providing additional resilience against funding reductions and enhanced capacity to capitalise on opportunities that stem from government policy and devolution.
  • New opportunities brought about by increased scale, in Adult Education, Higher Technical Education and Apprenticeships.
  • An unmatched and nationally significant curriculum for young people, with the financial capacity to introduce new areas to support industries, like offshore wind.

If this stage progresses as we hope, there will be a further vote by both Boards to determine whether we actually merge. The aim is to reach a final decision in November 2025.

In the coming months, both colleges will create FAQs on their websites and a detailed brochure to outline what a merger could mean for staff, students, Apprentices, employers, stakeholders and our community. There will be a full public consultation and engagement with stakeholders like you will be central to this process – your perspective and insight while we explore this opportunity will be invaluable.

Grand Opening of the new Air Source Heat Pump Training Hub 

We recently unveiled the Air Source Heat Pumps in the new Green Skills Hub at the Construction Training Centre. These training bays are equipped with the latest air source heat pump technology, providing our learners with the opportunity to train in installing, maintaining, and repairing eco-friendly heating systems. 

We were joined by representatives from Daikin Europe and Exeter City Council, as well as training providers, colleges, and local businesses. 

Councillor Philip Bialyk spoke about the need to sustainably retrofit older homes in Exeter, and how the training hub will fill the green skills gap. Martyn Ford, representing Daikin Europe, provided insights into how the company’s heat pumps operate. Quantum Group assembled the bays and have installed similar green skills training solutions across the country. 

Five of our outstanding Plumbing & Heating apprentices offered visitors technical information on how air source heat pumps function and shared what they’ve learnt since the training hub was installed. Our apprentices are now building their confidence in working with renewable technologies, developing skills at College which they can then use in the workplace. 

Giving our full-time and part-time learners the tools they need to build their green skills will enable Exeter City Council to implement these technologies in new developments around Exeter and ensure they are viable for the future. The training bays will also be used for the Introduction to Heat Pumps course, which is free for homeowners, landlords, and trades professionals living in East Devon. This Training Hub is the remarkable result of a collaboration that we hope will set the standard for other training providers and local councils, positioning Exeter College as a leader in green skills training. 

Devon and Torbay Devolution Deal shapes the way forward for future engineers studying at Exeter College 

Embracing new technologies has been integral to the ethos and success of engineering at Exeter College through the years and at no point has this agenda been more critical than now.

As the South West continues to expand its portfolio of low carbon energy, training providers across the region are in a perennial cycle of curriculum review in order to adequately prepare learners for their futures in the green economy at the local, national and even global levels. With large-scale clean energy projects such as Hinkley Point C in Somerset, floating offshore wind explorations, the establishment of the UK’s only operating geothermal plant at Eden Project, amongst other myriad green initiatives, the South West is more than set to play its part in meeting national net zero ambitions.  

The Level 2 Devolution Deal for Devon and Torbay has meant that local authorities have been able to collaborate to maximise opportunities in support of net zero objectives. This has included benefitting from the capital grant scheme funded by the UK government as part of the Deal and managed by Devon County Council. The scheme has allowed Colleges to invest in facilities that will advance growth in significant sectors that include advanced manufacturing and engineering and environmental technologies, such as alternative fuel vehicles.  

In the Faculty of Engineering, Aerospace and Automotive at Exeter College recent investments have included two electric hybrid vehicles, as well as a fully interactive Toyota Mirai hydrogen fuel cell electric vehicle trainer.  

“The provision of this new Toyota Mirai training rig takes us one step further in our aim to bridge the skills gaps in the transition to a green economy. This facility offers practical, hands-on experience to further prepare our learners for the mass roll-out of alternatively fuelled vehicles, including hybrid, electric and hydrogen.” – Andy Wells, Head of Faculty 

Engineering at the College has also been bolstered by the introduction of new equipment. In February 2025 the Faculty took delivery of a number of Haas Automation computer numerically controlled (CNC) machines. The machines produce a wide range of industrial components for sectors including automotive, aerospace, medical, electronics, and more. That students have access to specialist, cutting edge technologies such as these stands them in good stead for their progression into the workforce of tomorrow.  

“On the practical side of the course we have been given the opportunity to use CNC mills and CNC lathes. This programme gives you a very in-depth and close relationship with these tools so you can feel confident with them even before you enter the working environment.” – Callum Northover, Design and Development for Engineering and Manufacturing T Level student 

Quality training to produce high-precision parts is a vital tool in the advancement of renewable energy technologies in the region. To deliver the required standard of training providers must continue to invest in top-level industrial equipment, and we see this played out at Exeter College as funding facilitates the procurement of the most up to date machinery. Engineering students have also recently seen the arrival of the latest virtual welding equipment, making the Faculty one of the largest such learning facilities in the UK. The new machines add to the suite of virtual welders already in place, increasing capacity for training opportunities. The simulated welding units offer a safe and affordable introduction to complex processes, while also conserving resources. They are an important bridge between the welding curriculum and hands-on training. 

The decarbonisation of all sectors of the UK economy by 2050 remains integral to UK government policy. As local leaders are granted increased powers and funding to support the Net Zero Strategy we can expect to see localised responses to climate action, including the facilitation of low-carbon travel, and investment to meet the skills needs of the green economy.

It is our duty to ensure we are adequately preparing learners so they can progress into exciting opportunities available within the workforce in this region, and beyond, with the skills to support an industrial strategy based on green growth. Exeter College and JobCentre Plus Launch Career Builders Programme for Adults Re-entering the Job Market 

Exeter College, in partnership with Exeter Jobcentre Plus, is proud to announce the launch of the Career Builders programme – a new initiative designed to support adults on their journey towards employment, volunteering or further training.  

Career Builders is a tailored learning programme aimed at adults who have been out of the job market for an extended period. Many participants in this cohort are living with disabilities and the programme’s inclusive approach ensures that all individuals receive the guidance and support they need to achieve their goals.

The response has been incredible, with strong interest from Jobcentre Plus customers eager to return to learning, build skills and pursue job opportunities in Exeter and surrounding areas.” 

The programme will offer a series of free courses focused on: 

  • Job seeking skills: Providing practical tools for navigating the job market, from crafting compelling CVs to succeeding at interviews. 
  • Health and wellbeing: Equipping participants with strategies to maintain physical and mental health while preparing for re-entry into the workforce. 
  • Work-ready skills development: Building essential skills needed to thrive in today’s dynamic workplaces.

Exeter College Launches New Level 5 Assistant Practitioner (Health) Apprenticeship

Start Date: 1st October 2024

Exeter College, in collaboration with Plymouth Marjon University, is excited to announce the launch of the new Level 5 Assistant Practitioner (Health) Apprenticeship, starting on the 1st of October 2024. This program, aligned with the NHS Long Term Workforce Plan, is designed to meet the growing demand for highly skilled health and social care professionals.

This apprenticeship offers a unique opportunity for experienced individuals in support roles to enhance their clinical expertise while working alongside registered healthcare professionals. Upon completion, apprentices will be well-equipped to deliver, supervise, and coordinate compassionate care for diverse patient groups across a variety of health and social care settings.

Key Details:

  • Course Title: Level 5 Assistant Practitioner (Health) Apprenticeship
  • Length: Up to 24 months
  • Study Mode: Day Release every Tuesday
  • Location: Hele Road Centre, Exeter College
  • Start Date: 1st October 2024 (Welcome Day)

Employers across the healthcare sector have already recognised the essential role of Assistant Practitioners in improving patient outcomes. “Our Assistant Practitioner has helped tremendously on the ward, bridging the gap between our HCAs and our Band 5 nurses. She is the first line of defence in patient care and is a highly skilled member of the team, due to both her educational and clinical training,” said Rhi Humphreys, NHS Midwife.

The apprenticeship offers 12 comprehensive modules, including:

  • Providing high quality, evidence-based clinical, diagnostic and therapeutic care
  • Foundations of professional practice
  • Anatomy and Physiology
  • Communicating effectively
  • Communication and working in teams
  • Quality improvement, audit and research activities
  • Leading and Integrating Care

The programme is carefully designed in partnership with healthcare employers and service users, ensuring that students are equipped to meet real-world demands.

The programme has been designed in collaboration with employers and service users, combining study that is university-based alongside learning in the workplace. The program is designed with extensive support and learning resources, including access to a state-of-the-art simulation suite, replicating hospital, GP, and community care settings.

Entry Requirements:

  • A Level 3 BTEC or QCF in Health and Social Care (or equivalent)
  • T Level P (C+ in core elements)
  • Three A-levels at grades DDD or higher
  • Level 2 GCSEs (grade C or above in English and maths) or equivalent Level 2 Functional Skills

This apprenticeship is an excellent pathway for those looking to develop their careers in health and social care while contributing to the future workforce.
