What is it like to study this course and how will I be assessed?

Learn the art and techniques of working with couverture to create your own varieties of delicate, handmade chocolates.

What topics will I study?

This exciting programme will cover the processes of:

  • Tempering
  • Hand Moudling
  • Hand Dipping
  • Producing a variety of centres eg toffees, ganache and praline.

What are the entry requirements?

None – all are welcome. This course is suitable for anyone who has an interest in cooking or confectionary.

What facilities are there?

The Laurence Building boasts industry standard kitchens with professional equipment, alongside a newly built skills kitchen area. The facilities and lecturers provide the best environment for you to learn.

What can the course lead on to?

You could undertake another catering course such as Patisserie or Cake Decorating. Develop chocolate for fun or your business.

Are there any additional costs?

You will need to provide your own ingredients (minimal cost) – details will be sent to you once enrolled.

It is important that you apply and pay for your course at least one week before the course starts to ensure that you will have access to all the facilities and resources in your first week.
Please be aware that there are no car parking facilities at Exeter College city centre sites, but public car parks are available across the city.
